Brussels Sprouts Chips

Brussels sprouts do not deserve their reputation. Sure, when you make the canned kind or totally overcook them, they are very bad... but done right, they are like vegetable candy.

Or in this case, vegetable chips.

Yay, Brussels Sprouts.

Making chips out of things is a fantastic hobby, especially with Brussels sprouts. These little paleo snacks are made from the outer leaves, so you don't have to waste them if you're cleaning whole sprouts for another dish. And it'll make you want to buy extra just to do this with them. So delicious.

Also, I struggled with calling these Brussels Sprouts Chips or Brussels Sprout Chips... what seems natural to you?


BRUSSELS SPROUT CHIPS

paleo, whole30, gluten-free recipe

INGREDIENTS

  • 2 cups of outer leaves from Brussels sprouts

  • 2 T olive oil

  • kosher salt, to taste

INSTRUCTIONS

  1. Preheat the oven to 350 degrees.

  2. Toss sprout leaves in olive oil and spread them in a thin layer on a lined baking sheet.

  3. Bake for 10 minutes.

  4. Realize you should've doubled the recipe, because these'll be gone rrreal quick.

NOTES

  • Nom Nom Paleo puts lemon zest on her chips — which sounds delicious! You could also do some fun seasoning combos, but these are great as is.
