Paleo Banana Muffins


Two words: BAKED GOODS

More words: I'm not great at baked goods. With cooking, you can eff stuff up and still fix it later. With baking, it's a science. I'm bad at following directions. Regardless, these came out pretty well and muffins are as convenient as can be. They did have that healthy taste to them (maybe unavoidable?), but you'd never be able to tell that these were flourless. I think I will mess around a bit more with banana bread recipes, but this is a good start!

Paleo Banana Muffins

Paleo and Gluten-free

  • 2 cups almond flour
  • 1 T cinnamon
  • 1 tsp ginger
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup honey or date syrup
  • 1/2 cup water
  • 2 eggs, beat
  • 2 ripe bananas, mashed well (gettin' black)
  • Optional: Nuts, dried fruit, coconut, whatever else you feel like putting inside or on top.

Preheat to 350. Grease muffin pan (or use papers). Mix dry ingredients together, then add wet ingredients and mix well. It's OK if there are banana lumps, but you don't want dry lumps. Pour batter into the muffin tin, top with sliced almonds and bake for about 25-35 minutes, depending on your oven.  Let cool on a cooling rack. Spread with nut butter or drizzle with coconut oil.
